1 Heat a large pot over medium-high heat and season the chicken breasts on both sides with 1 teaspoon of salt and ½ teaspoon of black pepper. 2 Add the olive oil to the pot and cook the chicken for 2-3 minutes per side, until golden brown and cooked to an internal temperature of 165°F. Remove from the pot and set aside to rest. 3 Add the minced garlic to the pot and cook until fragrant, about 15-30 seconds. 4 Deglaze the pan with chicken broth, scraping up any browned bits from the bottom. 5 Stir in the pasta and bring to a boil. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most liquid is absorbed. (Larger pasta shapes may take longer, while shorter may take less) 6 Slice the cooked chicken and return it to the pot with any accumulated juices. 7 Reduce the heat to medium and stir in the heavy cream, spinach, nutmeg, and parmesan cheese.
